In the first class of Course II, Flowers and Cake Design we will  learn:
 

  • Complementary design uses colors that are opposite one another on a color wheel. They "complement" one another:Think about Christmas colors, red and green; Easter colors, yellow and violet.Complementary colors each look brighter when shown with their counterpart.

  • Monochromatic design uses only one color in a variety of shades.

  • Triad design uses three colors that are equally spaced on the color wheel.

  • Neighboring design uses three colors that are next to one another on the color wheel.Each color will share an element of it's neighbor...red, red-violet and violet or red, red-orange and orange.

  • How to make a parchment bag


We will learn that Royal Icing contains only 3 ingredients and that all of your mixing implements (bowl, beaters, spatula, spoons, storage container) MUST BE GREASE FREE! I cannot stress this enough. If there is grease on anything it will cause the icing to separate. This cannot be fixed...the icing will have to be thrown away. To avoid the grease problem wash everything with Dawn in HOT water. Allow to dry or dry with a clean paper towel then wipe with a Clorox wipe. Allow to air dry before use.
Add sugar and meringue powder to mixer bowl. Stir till combined then add 5 tablespoons of warm water. Mix on low speed for 7 to 10 minutes. USE A TIMER!! 7 minutes is the minimum! Icing will form stiff peaks and will lose its sheen when it is done. This is thick consistency icing.

Flowers

Course II - Flowers and Cake Design

Patience is a virtue!!!

PRACTICE MAKES PERFECT!!!

Flower Nail Flowers Week

You will come to class prepared with two recipes or your Royal Icing. With this icing you will begin to build your floral bouquets.

 

This week we will learn and practice:
 

  • How to fill and close a parchment bag

  • How to use a parchment bag to make drop flowers

  • How to make a rose base and center

  • How to make an Apple Blossom

  • How to make a Primrose

  • How to pipe a rosebud directly on a cake/cupcake

  • How to use the wave flower former

Intro Week

The Wilton Rose Week

This is the week to remember! We will complete our first Rose. The excitement will continue as we learn a trio of beautiful flowers

 

This week we will learn and practice:

How to pipe The Wilton Rose

How to pipe a Daffodil

How to pipe a Violet (the perfect little "filler flower"

How to use the lily nail

How to pipe a lily

How to make stems and vines

How to design a cake

 

The Final Project

You have reached the final lesson and now have a group of impressive flowers under your belt! Now we learn some finishing touches that will put your flowers in the spotlight!

 

This week we will learn and practice:

How to pipe a reverse shell

How to pipe a basketweave pattern

 

We will review the Rose.

We will come prepared with a soothly iced cake that is ready to decorate with our pre-made flowers. We will have a design plan drawn on a template and royal icing in your choice of colors.

 

 

At the end of class we will take pictures of our cakes and certificates will be given out.

 

If time allows we will see a sneak preview of what Course 3 has to offer!
